Our vast brewing experience and personal enjoyment of many styles pushes us to offer a diverse range of beers that all measure up to excellence. We use ingredients from our farm, the Hudson Valley, New York State, and around the world to find the perfect companionship of flavors and ingredient expressions.

We will continue to fill standard size growlers. Our growler fill pricing remains unchanged. All growlers must be clean and we prefer brown glass. We may be unable to fill certain growlers based on size and style.

Flow Control
Flow Control is hopped generously with some of our favorite pungent American hop varieties. We add a nice percentage of oats to this recipe to enhance its overall softness. Big aromas, dynamic flavors, and a gentle bitterness. Candied orange, ripe peach, melon, and green dankness.
Obsession
This IPA stems from our ongoing obsession with Mosaic hops. We’ve created a simple platform to let this dynamic hop shine. Simple yet complex, highly drinkable and refreshing. We taste all kinds of orange, ripe melon, berry, and subtle earthy spice.
Simple Math
This IPA is loaded with Galaxy Hops. Undeniably aromatic and flavorful. Soft yet crisp and full of brightness. Pineapple pulp, bright citrus zest, white grapefruit, and a little dank.
Sundial
Sundial was born out of our constant desire to awaken the palate with stimulating flavors. We find it to be soft and supple with a flavorful mid range and balanced resinous finish. This one shows off bright and expressive flavors of orange and pineapple flesh, lemon candy, cantaloupe, and stone fruit.
Color Bars
We’ve found a balance in such an enjoyable style. All the right fruits are alive. Young pineapple, orange pulp, peach rings, and mango sorbet.
Complex Math
We took Simple Math and made it, well……complex.
Double Obsession
The name speaks for itself. Given that this beer came directly from an obsession with a singular hop, we had to figure out how to get more in the glass. We simply doubled it. The result a Double IPA that is even more saturated with Mosaic goodness.
Fall into Place
This beer carries a very young and dynamic presence yet the wisdom of age is always peeking out from within. American and Southern Hemisphere hops provide the dynamic blast in this beer.
Liquid Phase
Heavily hopped with Simcoe and Citra, this beer exhibits the right balance of brightness and softness that we continue to strive for in our hoppy beers. Apricot, dank orange candies, peach, passion fruit, and soft herbs.

Rotational Beers - Farmhouse
Emergence
Our flagship farmhouse ale fermented with a unique blend of yeasts. This culture produces bright citrus, orchard fruits, ripe tropical fruits, and subtle spice. Pleasantly tart and funky.
Stablemate
This beer gets carefully aged with a blend of fruits which compliment each other in beautiful ways.
Rotational Beers - Mixed Fermentation – Wild – Sour
Character Blend
Each number showcases a different fruit or family of fruits. This beer has a perfect balance of acidity, tartness, and mouthfeel to really let the fruit shine.
Rotational Beers - Dark
French Press
Brewed with an array of expressive dark malts and coffee beans. This is a very bold but smooth stout. We taste freshly cracked coffee beans, dark cocoa powder, buttered pecans, and dark fruits.
Violent Moon
This milk stout is brewed with an array of dark malts, cacao nibs, espresso, and lactose. A tasteful addition of milk sugar adds a beautiful creaminess to the rich chocolate and robust coffee notes expressed in this beer.
Occasional Beers - Hoppy
Realism
Creating big flavors from bold ingredients isn’t the only way to produce complexity. We wanted Realism to exemplify this with all of its subtleties. We’ve added a large percentage of wheat to this recipe and let the uncool hops do the talking. Lime custard, ripe peach, adult herbs, and soft flowers.
Celebrity
We created this beer to celebrate the qualities of a single hop. This American Pale Ale allows us to explore the flavors, aromas, and nuisances that a hop variety has to offer. These explorations often lead to new and exciting recipes that push flavor profiles into new territory. We look forward to sharing these unique and limited batches with you.

Emergence with fruit
We have taken our flagship farmhouse ale and aged it with local Hudson Valley fruit. We allow our house brettanomyces culture to delicately interact with the fruit until the perfect harmony is achieved. These delightful, complex beers exemplify the beauty of fermentation and are released throughout the year in limited batches. Past fruit versions include peaches, pears, plums, black currants, montmorency cherries, muscat grapes, and concord grapes.
In the Field
Inspired by the lighter side of Belgian Farmhouse Ales. This beer is barrel fermented and aged with a variety of yeasts and bacteria. As seasons pass, microflora and foraged ingredients from around our property and beyond will be used in a tasteful way.
Promote the Thief
An ongoing series that allows us to promote and blend different beers from our barrel program. Released only when the appropriate balance of fruitiness, funk, oak, and acidity can be achieved. No vintage shall ever be the same!

Eskimo Kiss
Oude Rouge
Inspired by our favorite Flemish Reds that the Belgians do so well. We provide a delicate and slightly toasted malt backbone for our unique blend of yeast and bacteria to work with. The result is complex. Sour cherry, cranberry balsamic vinegar, tobacco, toast, burnt sugar, and mild funk.
Rusticity
This mixed fermentation beer begins it’s life by collecting flowers from around our farm. Through it’s life cycle it spends time in oak wine barrels and is frequently aged with fruit. There have been blended as well as single year versions. This is a truly delicate beer and a joy to experience.
Occasional Beers - Dark
Midnight
This annual release is a rich and complex double stout that has had varieties with coffee as well as rye whiskey barrel aged.
Assent
A dark strong ale with black currants fermented with a unique blend of yeasts and aged in Millbrook Winery Cabernet Franc barrels.
